I was able to move the seat on the tadpole back a few inches, which improved the handling dramatically.
I finally finished truing up the Nexus wheel, and installed it on the tadpole. It's as smooth as silk, and with the rear derailler kept in place, I'm able to use the 3 chainrings, giving a gear inch range of 16.6 - 93. According to the computer, I'm able to spin 72 rpm in high gear, going 19 mph, with spurts of up to 84 rpm going 23 mph. If I install a larger crankset, I'll still have a low enough gear to climb the hills around here, and increase the gear inches to 101.5, and top the 20 mph mark. My legs really got weaker over the winter. A few months ago, I had this trike at over 30 mph, easily maintaining 90 rpm in top gear. Hopefully, more riding will increase my leg strength.
