I can't seem to find a donor bike with brake cables long enough to fit the Meridian. I found some cable for tandem bikes at the local bike shop, but I'll likely have to cut it. Has anyone found alternative solutions?

A good sharp pair of dikes will cut the cable. It will cut the casing too, but you'll have to round the inside opening with a nail or something small and round that will fit.

The brake cables found at department stores seem to be longer than the ones found at a bike shop. Try those, they even fit my Marauder.
I cut mine with a zip disc, as it leaves no sharp edge.
If you ever need a really long cable, many motorcycle shops can make you a long throttle cable, which is the same as bicycle brake cable.

If you call around to your LBS's, ask if any of them have brake cables for a tandem. Those are typically 130" plus, plenty long enough for the Meridian. A lot of places also stock "universal" brake cables (sold as cable in housing, with cast ends on either end, just cut off the one you don't want).

A lot of the online sites have cables that are 60" long.
